LEMON & HERB DRUMSTICKS WITH
CRUNCHY FETA & WALNUT SALAD
■ Preparation time: 10 mins ■ Cooking time: 50 mins ■ Serves 4
INGREDIENTS
8 (1.2kg) chicken drumsticks
1 packet Continental
Cook-in-Bag Lemon & Herb
Chicken Recipe Base
8 small coliban potatoes,
halved
2 Tbsp olive oil
2 baby cos lettuces, washed, dried
% cup crumbled feta
2 Tbsp toasted walnuts,
coarsely chopped
Extra olive oil
Lemon juice
Freshly cracked black pepper,
to serve
METHOD
1. Preheat oven to 180°C.
2. Put chicken in roasting bag. Add
Lemon & Herb Recipe Base to bag
and shake to coat. Tie bag. then put
on an oven tray. Using a fork, pierce
top of bag 3 times to vent.
3. Put potatoes on an oven tray, drizzle
with oil. Bake for same time as chicken.
4. Bake chicken “or 40 minutes. Cut
open top of bag and bake for a fudher
10-15 minutes or until chicken is
cooked and goiden brown.
5. Put lettuce on plates, then sprinkle
with feta and walnuts. Drizzle with
extra oil and lemon juice, then spmkle
with pepper. Serve salad with chicken
drumsticks and roast potatoes.
